In an Australian-first, a food tech startup based in Australia and the U.S., Change Foods, is developing cheese and dairy products made from identical dairy proteins and lipids (fats) –without the cow.

Whilst plant-based cheeses primarily made with soy, legumes or nuts have become increasingly popular with consumers in recent years, Change Foods is taking the dairy experience one step further by utilizing microbial biotechnology rather than focusing on plants. This approach allows Change Foods to produce new dairy innovations and best deliver the taste, texture, and functionality consumers desire — think of a sharp, crumbly cheddar or a melting, stretchy mozzarella — but without the impacts of traditional dairy.
